Yo se, I’ve been to Mexico several times throughout this pandemic. Mexico has so many gems and I highly encourage you to explore the countries we are currently allowed to visit. I personally want to explore as many cities in Mexico since I live so close. I'm falling more in love with Mexico each visit.

Puerto Vallarta is BEAUTIFUL. The city is surrounded by mountains and cliffs off the Pacific coast. I stayed at the most beautiful Airbnb, Casa Mis Rocas, with breathtaking views of Puerto Vallarta. I highly recommend staying here if you have a large group. The staff was so friendly and professional. The chef's food was excellent! I recommend also booking a massage outside on the patio.
Tacos y Tequila
I ate too good! The comelona inside of me was happy. Food and drinks are a lot cheaper compared to the U.S. Many restaurants and bars offer two drinks for the price of one. I suggest to try different types of tacos and tequila flavors, especially the ones you won’t find in the U.S.

El Caracol
I ate at El Caracol which is located on a secluded beach. You must take a boat to get to the restaurant located on Playa Las Animas. I order the mariscos (seafood) platter. This platter is enough for at least three people. I highly recommend. The seafood is literally fresh off the boat! You must also order the maracuya (passion fruit) margarita. So fresh!
Le Kliff
I love sunsets and Puerto Vallarta has one of the best sunsets I’ve ever seen. The finest restaurant with excellent food, customer service and breathtaking sunset views is Le Kliff. This restaurant is located on a cliff with several levels. You can also take Instagram worthy pictures here. I ordered the chef special of mahi mahi covered with pistachios and lobster. Que sabor! And of course, I ordered another maracuya margarita.

Traveling Post-Vaccine
Mexico still does not require testing upon entry but you will have to complete a health assessment when you arrive. Mexico still enforces masks and is following COVID precautions. I felt very safe. Unfortunately, even if you are fully vaccinated, you still have to test to return to the U.S. You will have to test at least 72 hours before returning.
